Butchering for beef and pork Sept-MAY

24/7 are the hours of the dairy farmer.  We slowly got out of milking cows and into meat cutting.  We  butchered for farmers in the area and for ourselves.  Between milkings and other chores we would funnel to the garage to cut meat and wrap with freezer paper.  As the boys grew older and were military and college bound, less time was spent in the barn.  Eventually the cows were sold and the 'meatshop' was built.  A great spot was the spruce tree lot.  A little farther away than the barn, but I could still walk to work.  Sometimes this ole' Marine would jog to work!  I love this new venture.  Roberta shifted her efforts from working in town and on the farm to revitalize and structure the new family business.  

 

We've evolved from white freezer paper to clear vacuum packaging.  From heaving hind quarters to winching them and then using the hydraulic table.  We have a rail system that travels through two walk-in coolers and a set of scales.  There is a large upright hot-smoker that finishes the hams and bacons.  A new addition to the business is the rotisserie hot-smoker that finishes our specialty meats.

Our specialty meats are a hot item!  We make sticks, rings, and logs from YOUR OWN meat.  You can get pepperoni, hot Italian, mild spice or medium spice sticks.  Choose Bologna, Kielbasa, Pepperoni and Summer Sausage for rings or logs.

 

Sticks, rings, and logs can be made from your venison, beef, pork, waterfowl, etc...

You may also add any kind of peppers, onions, cheese etc... to your meat mix.

 

Our signature specialty product is "Hanni Burger".  We put IN the burger what you put ON the burger.  (peppers, onions, bacon, pork, or your venison)  Choose plain, sweet, or hot seasoning in bulk or links.
